A reliable transformation system applicable to commercial varieties of durum wheat, has allowed us to study the expression and regulation of HMW subunit genes and the trafficking and deposition of seed storage proteins. This work may allow us to influence the assembly and interactions of the gluten proteins and their functional properties.
