Rutin (vitamin P) is flavonol glicoside compound possesing a broad spectrum of biological activity (effective in the treatment of increased capillary permeability in man). Overground part of three species: Fagopyrum esculentum Moench, F. tataricum (L.) Gaertn., F. cymosum Meissn. have been investigated for the rutin content. Chromatography of extracts with monitoring by UV detection allows to determinate of rutin profile of the samples. The structure of individual selected compounds have been identified by ['H]-NMR-spectroscopy, mass-spectroscopy. The contens of rutin in buckwheat have been determined by spectrophotometry. The contents of rutin in investigated species ranging from 1,1% to 4,6 % (at an average 2,6%). The higest contents of rutin (4,6 % of dry weight) was detected in overground part of Fagopyrum tataricum. The analysis of rutin content in the structure of the biomass of overground part showed that flowers and leaves of vegetative shoots contain maximum of rutin.
