Inhibitors of insect and fungal hydrolases are highly polymorphic in seeds and leaves of cereals, legumes and sunflower. In wheat and related cereals the spectra of inhibitors determined by IEF and gelatin or starch/amylase replica methods are specific for species, genomes or varieties and reflect links between diploids and polyploids. Data on inhibitors allowed relationships between Vigna species to be clarified and identified possible donors of genomes to the tetraploids. Trypsin and subtilisin inhibitors coded by several genes were highly variable in wild sunflower species and in lines of H. annuus. Inhibitors can be effectively used in studies of plant diversity, evolution and plant-parasite co-evolution in combination with other protein and DNA markers.
