STRAINS IRPEX LACTEUS FR. - PRODUCERS OF MILKCLOTTING PROTEINASES

Basidiomycetes can sythesize milkclotting enzymes which may be employed as substitutors of the rennin. We have conducted investigations on revealing perspective producers of the milkclotting enzyme among the I.lacteus fungus strains, obtaining of enzymous preparations and study of their physical-chemical properties. 21 strains of the saprotroph wood-decaying I.lacteus were studied. After all there were chosen 4 strains. The enzymes activity in the cultural filtrate varied within 6000-4000 standard units (0,5 - 1 min), being 8000 s.u. in the crystalline form. The activity of the milkclotting enzymes of an animal origin used in cheese production was about 2600 s.u. The data obtained testify that I.lacteus is a perspective producer of milkclotting proteinases.
