Hydrangea flower color is varied from red, through purple, to blue, from the same anthocyanin, delphinidin 3-glucoside (1). In the sepals phenolic compounds, 5-caffeoylquinic acid (2), chlorogenic acid (3) and minor 5-p-coumaroylquinic acid (4) was also isolated. However the ratio of them of the extract form blue sepals was different from that of red sepals. By using 1 in the presence of aluminum ion the blue and red flower color were reproduced by various combinations of 2, 3, and 4, and pHs in vitro. To clarify the concentration of components not in the whole sepals but in the colored vacuolar sap we collected blue protoplasts by using micromanipulation pipette and the extract was analyzed by micro-HPLC.
